The
volunteer parents who once ran the concession operation wanted
to be able to watch their kids on the field, thus the school’s
food service department is now operating the concession stand.
The result is that prior to each game, food is prepared by four
cooks in the high school kitchen, then trucked down to the stand
in hot boxes. The stand is using the same computerized checkout
system as the school’s cafeterias. “It’s only the second
quarter?” says Lisa Bonnaure, ringing up an order of cola and
fries. “I thought it was half-time, looking at this crowd.”
